提前准备食物。
姜切末。
大葱、蒜切末,朝天椒、野山椒、酸菜切条。
鱼框架切条。
黑鱼切成片放进碗中。
添加干淀粉、米酒、黑胡椒粉、盐和鸡蛋清混和匀称,腌渍一会儿。
炒菜锅中下油,放进麻椒炒出香味后添加鱼框架。
再添加野山椒、葱段、蒜和姜爆锅匀称。
随后添加酸菜、糖和水。
煮开后捞起来预留。
将鱼片倒进煮鱼框架的汤中煮开。。
随后倒进碗中。顶端撒上大葱末和辣椒干
炒菜锅中下油加温直到起烟,泼在辣椒干上。
